Would frozen shredded potatoes work? I ask because I just shredded an entire bag of potatos. I soaked them in cold water then blanched them for about 2 minutes. Cold water bathed them, removed excess water, flash freezes them and put 2c in freezer bag. I was hoping I can add the frozen potatos to cool water for a few minutes to unfreeze them and then cheesecloth them to remove water and continue? Anyone tried this? ETA. Cook time would probably be a few less minutes because they were blanched

Based on my own personal mishap and hundreds of dollars spent for my portion of the emergency room bill, when peeling the potatoes, either: (1) use the safety glove shown in the video, or (2) stick a fork into the end of the potato and use it as a handle to help prevent the potato peeler from gliding over the end of a finger that's holding the slippery spud. A few years ago, while peeling some russet potatoes, I was using an extremely sharp, serrated potato peeler (which I've since swapped for a cheap $0.99 peeler) and sliced the tip of my left index finger. We were unable to stop the bleeding, despite applying heavy pressure and holding my hand over my head. So, I ended up in the emergency room getting some shots in my finger to numb it (which wasn't entirely successful) before getting three stitches. Hopefully, this suggestion will save someone else from a similar fate.
