    I have a question, Whenever I make bottom crust of my pie as well, its somewhat uncooked in the centre, should I bake the bottom crust for 5-10 minutes with pie weights and then add the filling and top crust? Please help.

    I'm not even a fan of chicken pot pie, but this seduced me! The only difference for me is I (weirdly I guess) way prefer a lard based crust, much more tender IMO.
