    This looks great! I make a mayonnaise free compliant potato salad using California balsamic flavored vinegar such as mustard dill or Ruby red onion flavors. Once that’s good to go I add whatever non starch veg I feel like such as celery, cucumber, scallions, grated carrots etc. I’ve even added chickpeas and cooked cauliflower. I’ll often bring this to work on a big bed of spring mix and some extra California balsamic to drizzle over.

    I can’t wait to try this . I love potato salad. And for the record, I do not think you should silence your eating. It is a cooking channel. And if they do not like hearing people eat, don’t watch. Do they tell their dinner guests to eat quietly? I think not. Just my two cents.

    I used the dressing for this potato salad as the dressing for my Cole slaw! I shredded red and green cabbage as well as some carrots and diced an apple! I used smoked paprika instead of liquid smoke because that's the way I roll! Haha! Delicious! I also added some date sugar for the Cole slaw! Thanks for the inspiration! I will leave out the apple and date sugar for the potato salad!

    I made this salad today. I used diced celery rather than green onion. I prefer potato salad at room temperature so it will be for lunch in an hour. I also added some garlic powder and nutritional yeast to the dressing and used black salt. Delicious. I love potatoes hot or cold.

    Ok so probably not compliant for Mary’s Mini but would be good for Starch Solution. I put celery onions and whatever you normally put in potato salad but I use hummus instead of veganaise. And it is amazing. Gives you that creamy potato salad feel! Yum! I have also been known to put that on top of a tossed Green salad. Actually pretty much every day for lunch! 😆
