This is one of my favourite dishes. But I like when it's boiled with spinach or "lai saag" or mustard leaf with some bamboo shoot, salt, some local herbs and some chillies. Tastes great with rice and you can use some ginger leafs and dip them in salt (the way you dip raw onion or chilli ) and eat it with it. Best to eat on a steel or bronze plate so you can smack the bone on it to get the marrow out
