    The challenge is trying to cook this dish for a family of five. Trying to balance the noodle texture for 1 portion and 5 is completely different Notice how he didn't even use all the soaking noodles.

    The sauce ratio in the instructions seem to be a different than what he does in the video. What I did relative to the written instructions:
    A bit more fish sauce, a bit less tamerin, same amount of vinegar, a bit less sugar, a lot more lime juice, a bit more siracha, and the same amount of paprika.

    I was worried to make this, because I've tried other pad thai recipes and they were not good. This recipe is perfect! If you like Thai Express' pad thai, it tastes like a lighter version of that.
