    Have you already made a beef curry recipe before? Can I just change the chicken with pieces of seared chuck and replace the chicken stock with beef stock? Or is it an entirely different recipe?

    This looks fantastic. Personally I start by browning the chicken in batches, then cooking the onion in the rendered chicken fat for more flavor. Besides that, the recipe I’ve used for awhile is essentially the same. The inclusion of apple, honey, and ketchup are interesting, I’ll have to try them out next time.

    I would never discard excess fat. Use it to render out oil and cook in it. Adds so much more depth to the flavor. The fact you're throwing away good flavor ingredients tells me you're an unseasoned cook.
