I usually just add the drippings to a pan and add some Wondra with some cold water. This year, I followed a very time intensive recipe that involved cooking the giblets for hours with onions, carrots, and various herbs and then making a separate rue before combining everything with drippings taken from under the turkey (where I also added onions, bay leaves, etc.). It was very labor intensive, especially when you are cooking a dozen other things. The gravy ended up tasting almost EXACTLY the same as when I just use Wondra and cold water with drippings. I will not be making the same mistake next year.

can you add flour without fat to the liquid? or you must for it to work?
so glad you use what you have when you roast a turkey, no adding chicken stock from a box or making a roux from butter, better use pan drippings and water and the turkey grease for the roux.

What can I use instead of flower
If you put the drippings in the fridge, the fat will rise and become solid, and removal is a breeze.
I don't cook turkey often, we cooked our second today and I wanted to make gravy from the drippings. I've done it in the past with alright results but this is now my go to method. Came out wonderfully! Thanks James!

I went through countless Fake bs videos from Martha to cooking wanna be's videos, that added all kind things wine, broth, oil. That's not grave , people of old didn't have wine and chicken broth, oils sitting around. Just water, flour , salt , butter to make gravy.
