    Thank you for this video. A lot of grocery stores around here have these lovely oranges on clearance right now and between this marmalade and your orange curd I am no longer racking my brains trying to think of something to do with all of them besides smoothies.

    Thanks Linae – I did go through and subtitle the whole video now… you can view the subs by clicking on CC :). My newer videos are hopefully much better… I invested in a much better mic!

    Hi Kathy, thanks a lot – my newer videos have much better sound, haha – the microphone I was using then was really bad! I did go through the video though and actually write out subtitles for the whole video though – you can see them by clicking on "CC". I also have the recipe posted on my own site, linked to under the video in the description! 🙂

    I had a hard time understanding the video too. I like the caption idea or a direction list for later printout would be helpful. There was a little feedback which made it hard to understand you in the video, especially during the blender scene. You might have been a little close to the microphone, which would would result in the slight echo sound making it hard to hear. Great voice, just to close to the mic. Thank you for sharing.

    Thanks for your comment, and your questions!
    The seeds – I actually used clementines, so there were no seeds. If you do use a citrus fruit with seeds then I'd take them out before cooking.
    The shelf-life – I had at least one jar in my cupboard for a year. When I took it out the flavour was delicious, I think it improves over time. As long as it's an air-tight seal it can keep for at least a year. Hot water canning should be absolutely fine, and shouldn't alter the life of the product! Good luck!

    I could hear just fine but I got some questions – you take the seeds out when it is cooking or before cooking – and – how long will it keep on the shelf or in the fridge and if I hot water canned it would that be okay???

    I guess quartering them would be quicker. As you can see the food processor is already used to everything up, but I just cut it small in the first place to get the pips out and to put less strain on the mixer (my mixer is a bit old and not very good)!

    Easier: use the processor slicing blade: quarter the fruit, shave off/discard white strip down the center, belly button, stem &put everything else thru processor. does a better job than by hand. Boil the juice, measure (by volume) &use 3 parts sugar to 4 parts of fruit mix. Example: I had 2 gallons juice on Sunday &added 1.5 gallons sugar. just right, not too sweet or tart. Great grandmas 100+ year old recipe. pips float while boiling; skim out. SoCal here: we have trees & make LOTS of marmalade

    @hotboyclarence – Yeah, sound quality isn't great – I try to do what I can but I'm always on the lookout for improvements. Maybe I'll just skip the voiceovers and put captions instead.
