What an interesting take on carnitas! Looks delicious, I bet the enchilada sauce really infuses the pork with some awesome flavor! It looks so soft and tender 😋 You could probably emulate a little bit of traditional carnitas flavor by frying the meat in some lard, rather than broiling, this definitely looks like a healthier option though! 😅 That avocado salsa looks really tasty!
