Hmm.. i do something different with more soup than brazed shanks. But your recipe does look good. I'd try adding fresh thyme, a lot of ground pepper, and some acid at the end just to bring out the flavour. It won't be sour but adding a little bit of vinegar or lime at the end is nice. Make sure not to add the acid because it could make the veggies a bit crunchy.

Hi, I checked your website and was looking for poultry recipes and there weren't any. I have looked all over online on how to pressure cook goose. I'll be using a 6.3 quart stove top PC. Not sure how much of the skin to remove to make it. I assume to make it fit in the PC I'll have to cut the goose in half and do it twice. I'm not fond of the taste of goose but did have a recipe that involves cream of mushroom soup, garlic, fresh chopped onion and spices. It should be shredded like pulled pork, the onion needs to dissolve and most of the fluid should be cooked out so it can be put on sandwiches. Any suggestions on how to do this ? I've never used a PC before. I usually roast the goose, debone it then put it on a pot on the stove with the ingredients and stew it for a couple hours. It takes most of the day to do it this way. I'm not sure how long to even cook it. Please help me.
