I got an electric dehydrator and did a load of frozen vegetables, but the temp kept varying too much so I sent it back. Now I just dehydrate during the winter on racks next to my wood stove. It works a charm. Lots of veggies for very little money or time and no extra electric bill – especially with our electric rates having tripled here.

Thank you so much for your fascinating content! I was checking about nutrients and what happens when they're dehydrated. Turns out they lose about 10 times more nutrients being frozen so this is a great video! I do not have a dehydrator but I purchased an oven and that has a dehydrate on it. My question is what temperature should I set it on and can I use silpats on a cookie sheet to dehydrate the frozen vegetables? By the way I loved the zucchini flour video you did! Thank you again so very much God-bless you and yours!

I’ve been dehydrating for years. I rehydrate by putting my dried veggies in a bowl, adding warm tap water, put a lid on the bowl and stick it in the fridge all day or leave it on the counter for a few hours. Not a big deal if you plan ahead. They can even be started the night before.

Mary…..NO NEED to 'defrost' frozen veg to dehydrate. It will not shorten the time it takes to dehydrate them. I LOVE dehydrating frozen veggies…….Open bag…..Dump on tray…..DONE! lol

I have been dehydrating for 6 years running now. The pantry space it saves is incredible. I puréed a 35 pound blue Hubbard squash and made chips I throw into soups, sauces, stews. I was able to fit that entire 35 pound squash into 1 quart jar. I do the same with pumpkin and other squashes.

My dog loves just about any fresh veg other than onions and garlic. Never figured out why not just buy dried beans. Using my good old LEM dehydrator, over 13 years old outside in this heat and still doing a good job. I use parchment paper for my liners. I just load frozen vegetables without rinsing, I guess if there was a lot of ice crystals I'd rinse them off but never had to. I separate my carrots, celery and sweet onions. Lots of mushrooms, sweet red and orange peppers and potato slices. I blanch potatoes, celery, carrots and use less than 1/8 teaspoon of citric acid to the ice water left for 15 minutes before I spread them onto my flour sack towels to dry them for a short time before loading dehumidifier. The only thing I don't store in food saver sealed jars are the potatoes and I put them in mylar with oxygen absorbers. I have only lost seal on one jar that I'm constantly resealing so I leave the bands off. I do use a food saver machine for sealing.
