Just made this. We love it!
I accidentally put chick peas in together with tators and when I realized I messed up i was gonna pick them out 1 by 1 lol…. hubby said let's see what happens. They got soft but did not mess up the dish! I'm a fan!

It's -6 Celsius outside here I northern Norway, and let me tell you this was a fabulous warmer. Made it from a rich homemade veg stock. It needed some salt and I also exchanged the cayenne for extra hot chilli flakes and just eyeballed the amount of spices. I also decided to increase to 2 minutes of pressure cooking time in hopes that the sweet potato would become more mushy so that some stirring before serving would add thickness to the liquid/broth. And it worked. Thanks for the recipe, it is definitely a keeper.

This went over really well in my house. My 10 year old girl went back for seconds and asked me to make it again sometime! I needed that win in a plant based dish that the whole family would jump on board to. Before I realized this was what I had bought rice for I already had a big pot of it seasoned and going to serve it over so we just rolled like that.

Loved this recipe. The flavors were delicious. Love the texture of the garbanzo beans. I used cilantro leaves and lemon juice as that is what I had available to me. I am new to iPot so this was helpful. And your encouraging smiled helped as well ๐Ÿ˜Š

I've been making a version of this recipe since I was in High School, and that's been years! This is a great recipe for Snow Days, when everyone is at home, getting squirelly….and hungry….it keeps well, for leftovers.

I only have one iPot that I use to cook beans from dried, and to make soup stocks. Of course, once I've cooked beans, I usually make a soup, or just well-seasoned beans to serve over the (ubiquitous) rice of choice

It's good to see you again, Sis…I've missed you…Oh, I love your new video/filming set up!!

OMGEEE! You are awesome! Thank you for making me smile, AND to not be afraid of my new 6 Qt IPโ€”which by the way, sat in its box for 6 weeksโ€”before I finally took it out to make chicken for shredded chicken tacos the other night. They were amazing and I now โค๏ธ my IP!! Thank you for sharing this beautiful recipe! I will make it for sure!

My goal is to get an 8 Qt next. Whaaaaat? This coming from someone who received a stove-top pressure cooker as a wedding gift 23 years ago, and never used it, out of fear. ๐Ÿ˜‚

We've missed you, out here, Jill. Just yesterday, I posted a couple of your links. I don't have an instant pot but do have a couple pressure cookers I've had for a long time. I hadn't used them for a long time but you inspired me and now I'm back into it. I just get them going and walk away so, works for me. This sounds like a fabulous dish. So good to see you and your great recipes.

Ive been recommending your videos for people who just got an instant pot and werenโ€™t sure what to do. Told them you are the best! Even if they arenโ€™t vegan ๐Ÿ™‚ and then maybe they will learn more about healthy cooking!

Thank you Jill. This was my inspiration for lunch today. I didn't have cooked rice so I threw in some uncooked bulgur with the vegggies and a bit more water. I added an extra can of chickpeas because I dig me some beans, and used frozen collards instead of spinach. I didn't have cumin so I used extra curry powder and added a bit of cinnamon. Very good! My sweet potatoes dissolved and I didn't.mind because it thickened the stew nicely. I topped it with Sriracha and my seven month old and I gobbled it up!
