chuck roast is chewy for sure if you don't cook it right.
It needs to be overcooked at low temp so that all the marbling becomes gelatin. Then it's super soft and gooey.
Look up "poor man's burnt ends". you want to make a variation of that whenever you cook chuck.
Otherwise, buy skirt steak if you're new to grilling meats.
That's the beginner meat that no one can ruin without buying expensive cuts like ribeyes or fillets.
I'll bet a good 30 sea salt tenderize would make it more delicious
I have such a phobia about not washing meat prior to cooking it. Makes me cringe when I see people go straight from the package to the pan.

I Got a question, is there a particular location I Should Put The Grill Probe Clip thermometer? I Noticed You Have It about 4-5 inches away From The Slow 'N Sear, Is that the best location for a Accurate Pit Temperature Read, it doesn't matter IYHO? When a younger woman, I was a single Mom of a hungry son and we couldn't afford steak. Soonce in a while I would buy chuck roast. I fileted it to get a thinner steak and grilled it on my old Weber grill. Best steak I've ever had! The got wise at the grocery and chuck got pretty high there for a while! Great steak tho..
I always grill chuck roast, cheap and flavorful cut of meat. Never found it to be tough or chewy.

Thats way we did it as a kid, but with a the addition of scrounged pacific oak. The flavor was awesome and if we marinaded it overnight, it was so tender!

I love grilled chuck. It's cheap, experiment and enjoy. I'm going to try the sear first then wrap in foil with green onions and go indirect while I cook other stuff on the hot side.

Bland as hell. Should have cooked it in a crockpot. It wouldn’t have been better.
