BEEF BARLEY STEW A hearty slow cook, carrots, broth herbs and spices. Best dish to cook for the cold weather. Ingredients: 500 g Stewing Beef 3 sticks Celery 1/2 of a medium Red bell pepper 2 medium Carrots. 1/4 of a medium Cabbage 1 medium Tomato 3 sprigs Fresh thyme 3 tbsp Cooking oil 1 medium Onion 3 cloves Garlic 2 tsp Salt 1 tsp Powdered garlic 2 tsp Ground pepper 1 pc Beef bouillon cube 1 cup Barley 1 tsp Paprika 1 tbsp Worcestershire sauce 1/2 cup Red wine (optional) 2 1/2 cup Water 5 g Cornstarch/flour 1 cup Frozen peas Directions: In a bowl combine the cornstarch/flour, teaspoon of salt, powdered garlic and a teaspoon of ground pepper. Use this to coat the meat and set aside. 1. Heat the pan with oil then start frying the beef. Fry them until golden brown. Set aside. 2. Use the same to sauté the vegetables. The garlic, onion, carrots, celery, bell pepper and cabbage. Turn off the heat. 3. Place the fried beef to the instant pot along with the vegetables, herbs and seasonings. 4. Cover it and set the time to 45 minutes. 5. When you reach the time check the consistency because it might need some more liquid. 6. Stir it well add some frozen green peas to add more colour to the dish. 7. Then it’s ready to serve. Enjoy! NOTE: If you don’t have a pressure cooker you can cook it on the stove for about 2-3 hours on a very low heat.
