I've been looking for authentic Northern African, MiddleEastern, Indo-Asian restaurants for several years, (since transplanting from the east coast/ New York), but hadn't had much luck… until recently. So, being a 'foodie ', and experienced S Chef, I've had to hunt down provisions, wherever/whenever I could to prepare dishes that included Lamb, and Beef Paya, (trotters). It's wonderful to see a how, to video, which shows how properly clean and dress this natural source of glucosamine, cologen, and Silica. Trotter stews prepared tandori style are fabulous!
