I love making congee when I’m broke and it’s the end of the month! And practically any other time as I can just throw everything into a pressure cooker and I have a big batch within 40 minutes and I can just throw anything at it!
Looks great but definitely should be with more broth if making it the real Thai version. Make the broth from scratch, not store bought chicken stock. And use jasmin rice. That is way too thick 🙏
I have never tried eating congee in my life! I don't even have an idea what it tastes like, it just seems so bizarre to me, to have rice cooked to the mush degree.

Comfort food thy name is Congee. In my household I make salted egg congee to cleanse the weekly palate of salty, greasy, fried food to get rid of the heat. I found out that it taste more enriched with a beaten egg in it. So good. Lately I've wanted to try different recipes for congee and here it is. This congee looks so fine and lush, creamy and tasty. I'm going to this on Saturday. Thanks M for another great dish.

Everybody on here saying conjee is ‘sick’ food. I don’t know how that happened in other Asian countries but where it originated, in South India, conjee is an everyday important meal (usually breakfast) for farmers and working class people. The original name in South India is ganji or kaanji.

This is the Ultimate Comfort Food, just had a nice bowl of this for breakfast with the addition of mushrooms, small cup of homemade Kimchi which my friend from Korea shared his Mom’s recipe with me.
