    You can eat bitter mellons raw though. It just needs a bit of preparing to get rid of the bitterness.

    Slice thinly into half moons after scraping off the seeds. Salt them generously and set them aside. After the bitter mellons have sweated and wilted, wash them with water to get rid of the salt. Squeeze the water and juices out and set it aside. Prepare dressing with: vinegar, lemon juice 🍋, thinly sliced onion, ginger (julienned), sugar, salt and pepper. Toss it all together. You can also add sliced unripe tomatoes and cucumbers so that It's not all bitter mellons in one bite.

    Best served cold or chilled.
