I love Japanese sweet potatoes. My favourite way to cook them, is to wash them first, then coat in a healthy oil that has a high "smoke point", so it does not smoke at the temperature cooked, sprinkle a little salt on them, then air fry them for 40 minutes +/- based on the size of the potatoe. I think my air fryer function on my microwave is at 425, but it does not indicate the temperature. I also instead, bake them in the oven at 425 for 1 hour and 15 minutes. 🙂

If you don’t poke potatoes, they will steam them selves internally. The reason why the one you wrapped in foil was more moist just because the steam didn’t get released but stayed inside of the foil jacket instead of filling the inside of the pot.
Thanks for the video. I recently found two Japanese potatoes and I wanted to cook them properly. I’m Living in very rural white USA. Where at least 1/3 of the people don’t eat rice. Are annoyed that sweet potatoes come in two colors. And think that there is only two kind s of potatoes. That being one kind of white with two different types. One type of sweet or two different types. And then your fancy making a dinner for the in-laws or date night: three color baby/yellow potatoes.
This is my favorite kind of potato, so I’m excited to cook it.❤

💛…i've always done unwrapped, in the oven…even then, i'd get unequal results, mostly from size and shape differences of different varieties or even within same variety…just add butter and it's all good…
