The sweet potato berries looks amazing!
I have two fav breakfasts rn-
Orange sweet potato/yam slightly mashed up so it still has chunks and put it in a in a bowl, some pumpkin purée, and applesauce (perks if it is applesauce made with peach and sweet potato!) and pumpkin pie spice. Then I put some berries, a bit of cranberry sauce jelly and plant milk over it. It’s good with sliced bananas, too.

Other fav- plain hot oats. I take frozen berries and put in a saucepan with some unsweetened cranberry juice and add liquid monk or allulose sweetener. Bring to a simmer and add a little starch slurry to thicken (so it’s like pie filling) and I put it over the oats.
Sometimes I brown a tablespoon of coconut flakes and a couple tbsp of granola and put that on top for crunch.

Is coconut too high in fat for starch solution? I’m always worried about that.

(Ive learned to drink my coffee black and even kinda like it! I have always been a “mostly cream and sugar” gal but it was too much fatty creamer… now I can do that as a one in a while dessert treat. I’m so proud of myself)

Awesome video! Love your tips, I am working on the black and white thinking. A great mindset I have learned from Chelsea with Lean With Plants is choose your next best mindset- what can I choose to do that is better, if I choose that I am going to have a treat choose the next best option instead of the worst option (one cookie instead of 2) or (a sweet potato with berries on top instead of a cookie).
Your so inspiring Kate, thank you for all your quality videos!

I love the sweet potato banana mash (credit to ThisGirlAudra) with berries on Japanese sweet potato, but I also like to do it on kabocha squash! I make a kabocha squash boat and stuff it with frozen berries. If it’s fresh out of the oven, the berries melt inside and it’s amazing. 😁
