    I love your content but think you hammered that beef. You can make a marinade with sugar, a bit of corn starch, soy and a bit of baking soda. Needs only about 20 minutes and then hit the grill for 1 minute on either side. Great maillard reaction, the sugar helps, and it will continue to cook a bit as it rests. You will need a sauce at the end for the noodles and veggies but it won't have evaporated on the grill. You are spot on about placing the beef, I do it in a wok and do the same thing. You want every slice hitting the hot surface for a short period on each side, piles aren't helpful in that regard. Thanks for sharing, I am sure it was great despite my beef ramblings.

    Neal, When I stir-fry using beef or chicken I always velvet them makes all the difference in looks and taste. I enjoy your different take on your cooking style and what tickles your taste buds….thats what cooking is all about enjoying how other people cook and getting ideas from them.     Great recipe to create the dish, super griddle instruction and use, of course the video work matches the griddlin. Combine all three, that is why this is the source for good griddlin. Going to have to search for some of the ingredients when we go to the "big stores". Great job.

    And for chili crisp – I haven’t had the brand you showed, but my favorite is Lao Ga Ma. It is excellent compared to the others I’ve had.
