I love your content but think you hammered that beef. You can make a marinade with sugar, a bit of corn starch, soy and a bit of baking soda. Needs only about 20 minutes and then hit the grill for 1 minute on either side. Great maillard reaction, the sugar helps, and it will continue to cook a bit as it rests. You will need a sauce at the end for the noodles and veggies but it won't have evaporated on the grill. You are spot on about placing the beef, I do it in a wok and do the same thing. You want every slice hitting the hot surface for a short period on each side, piles aren't helpful in that regard. Thanks for sharing, I am sure it was great despite my beef ramblings.

Neal, When I stir-fry using beef or chicken I always velvet them makes all the difference in looks and taste. I enjoy your different take on your cooking style and what tickles your taste buds….thats what cooking is all about enjoying how other people cook and getting ideas from them.
