This recipe is sublime– make it when you have time to appreciate the flavour! PS: I always find I need to lower the cooking time (yes, I tested my oven temp), as the pork continues to cook beyond pink whilst resting. However, the flavour is to die for and that glaze/sauce? Whoa. Try 1/2 & 1/2 honey/real maple syrup + a bit of butter…I'm doubling it next time. 🤤

Try brining the pork first. Make it much softer.
