    I just made soup from my leftover turkey breast, I boiled the carcass wrapped in cheesecloth, to keep the broth as debris free as possible, sautéed onion,carrot,celery in a separate pan, then added them to the stock, brought it to a simmer, made a rue, added that to the pot, finished it off with half & half, to make it creamier, poured the deliciousness over egg noodles, and of course, added turkey pieces back to the pot!

    Don't forget….there's a TON of flavor in the bones….so always break the leg/ thigh/ wing bones apart because that flavor is in the marrow. If you want to avoid mushy noodles, eliminate them altogether and replace them with white rice instead! just as yummy

    Why does no one let the pot of broth sit in the refrigerator over nite so the fat will congeal to the top and then be discarded? That's how I've done it in the past. Then you can skim the fat off the top and throw everything in after that and simmer it for maybe an hour then done.

    Calvin- what I do when I make a big batch of turkey soup and know I am going to have leftovers is to cook the noodles separately as in the video, but add ONLY the amount of noodles I need to each individual serving.  That way I can refrigerate or freeze the leftovers and the noodles won't get mushy in the soup.
