    This recipe is so good and addictive! After having cornbread this way, it's difficult to go back to the old versions we're so accustomed to here in the south.My family loves it! Substituted self rising flour for all-purpose and eliminated the baking powder and soda.

    I take cleaned sweet potatoes with skins on and cube them and put them into a collapsible stainless steel vegetable strainer in a deep pan with water resching the bottom of the strainer and steam them soft. A stick blender makes a gine thick pure'. A friend smoked sweet potatoes. This adds another layer of flavor.

    Making as we speak. First time. About two years ago I filled my oven with sweet potatoes and baked. Not sure how or why but I ended up packing the roasted sweet potatoes in ball jars and stuck them in my freezer. Frankly forgot about them for about two years. Iโ€™m happy to say they kept very well and are as good as the day I roasted them. Using some for this. Can barely wait. ๐Ÿค™๐Ÿค™

    Looks good, but I'd call it sweet potatoe cake or bread. Not enough corn meal, and an equal part flour. For corn bread, I'd skip the flour and double the corn meal. Maybe skip baking powder and baking soda, add yeast to make it rise.

    Anytime you add that much sugar to anything, it's cake.
    If I added that much sugar to my cornbread, it would be cake.
    Just because I'm using sweet potatoes which is already sweet way do you need that much sugar?
