    Tomorrow I had planned to make a throwback recipe from my Betty Crocker cookbook. Published in the early 80s. I used to make it all the time but somehow, I forgot about it. It is basically a classic meatloaf but you spread it into a rectangle, lay down deli ham and Swiss, and roll it up. I am going to use the tips you list here. We do use turkey meat, but I have had trouble in the past with texture. I think your ideas will help. I will have to use Thai full-fat coconut milk…lactose intolerant. I don't have any bread right now, do panko bread crumbs need more liquid?

    ETA I forgot, I use fresh veggies, BUT, I do keep frozen riced mixes in the freezer for emergencies. They have butternut, sweet potato, cauliflower, broccoli. A cup of one or more of those would make it easy to up the nutrition without added work.

    Mary, I want to thank you for explaining why you need certain ingredients. I have made meatloaf for decades. I make it like my mother. The basic recipe is: ground meat, bread, onion and bell pepper, tomato, egg. Salt and pepper, of course. I use whatever is handy and needs to be used up. I may add, celery, garlic, jarred pimentos or carrot. Fresh herbs. For the bread I use, rolled oats, crackers, breadcrumbs or sliced bread. For the tomato element, I have used, stewed tomatoes, ketchup, tomato soup or spaghetti sauce. The only thing that doesn't change is the topping sauce. My husband likes ketchup, yellow mustard and a little brown sugar. I've had great success with using any of those ingredients but sometimes it falls apart and I couldn't understand why it happens. Now I can better adjust for different ingredients. ❤️

    I've seen veal at our butchers. I was thinking what to make this Sunday. Its een over 20 years since I made a meat loaf. We can't eat pork so it has to be beef chuck sirloin. I've even forgotten the recipe for it. I don't believe in fat free or less fat. The taste disappears. 😋Thank you Mary.

    Mary sweet, I’ve learned recently that parsley cooked lets off a natural chemical that can cause kidney stones. I like parsley too but I use it only fresh now like in a salad.

    I have tried everything where it comes to meatloaf. The tried and true from my mom has always worked best. Oatmeal. Quick cooking. The one minute. Plus its better for you than bread

    Mary, you shocked me when I clicked on the recipe link and saw the fresh ink on your left arm. It was a perfect heart shaped tattoo that said, “Mary’s Nest”. Then I realized it was just a watermark of your logo/stamp with your arm conveniently underneath. 😅

    Looks delicious. Hope Lee and Daniel will like it. All is well with us except it seems Daniel is due for another haircut. He doesn't like when it gets in his eyes and also he doesn't like when I fix his bedhead. He's not awake enough in the mornings to do it himself.

    Hahaha! I used to put my onions, garlic, and green pepper in the food processor to hide it from my children. If they saw it in the meatloaf…"they called it a pickle" and wouldn't eat it. So the food processor help me to camouflage it. I got all the flavor but there was no trace of it! I like your recipe and learned a couple of new things. Thanks for sharing this one. I was just about to say I love meatloaf sandwiches. I will toast the bread in the toaster. Spread the bread with mayo and emmm, emmm good!
