Edit ~ I worked in a deli for a couple of years and it was nothing unusual to go through 7 dozen hard cooked eggs a day in various salads. The manager showed me how squeezing them into small bits instead of dicing them with a knife was a big time saver.

You did a great job on that Mayonnaise… I Have never tried it with Tallow, I have tried it with bacon grease and Butter, I didn't care for either one. I think I will stick to the olive oil version with artificial sweetener. I got that one to taste 99% like the real thing It's o k Im not a carnivore. L o l And I really don't use mayonnaise but once in a blue moon anyway. 🙂
my carni cake update: I don't have a chaffle griddle, just a smooth one. I started slicing my (somewhat thick) buns in ½ crossways, making 2 thin buns. Also they're almost like 'bread' on the fresh-cut side or the inside of a hamburger bun. QUESTION: if I want to start making these in batches … does the silicone muffin-top pan in the oven work just as well as the griddle in your opinion??

My home made mayo never turns out. And on the occation that itb dies thicken up it's not great.
I always use my instapot and do 1 dozen at a time, i cook them on the steam setting for 6 minutes and quick release then directly into cold water! They peel so easy every time i've done them this way!
