    One night, decades ago, on a chill rainy night, in a small den in Shanghai, a Turkish woman made this for me using a recipe her Ethiopian mother gave her. The recipe was made in New York and has an American nature to it. We call it Chinese-Trurkish,Ethopian/America, Mexcian Style French Bread. It has pockets!

    Whoa sister! You got me this time.
    I used to deliver this style bread all over ElPaso in the early '70's. They're so delicious … It was understood you must bake them in clay ovens to achieve the crust, properly. Now, if you found a way to produce a truly hard crust with a regular oven; you'll be my heroine for sure 😇
