    Being safe and healthy during this pandemic is definitely worth giving thanks for. And congee is my favourite comfort food (I love a good Pei Dan Joke, hehe). I notice you often cook big batches of food. Do you store them for subsequent meals or serve them to other guests?

    Yup. I do a similar thing. My grandma taught me to throw in some dried scallops, and dried shitaki. And of course, if you got any edgy parts of the leftover ham, its a great way to add that salt and umami.
