    Made a miso soup inspired by this recipe today. I used shiitake dashi since I can't seem to find konbu near me, And for veggies I used butternut squash, potatoes, carrots, leek, green onion, and enoki mushrooms. I also made homemade aburaage. At first I didn't know what to think of it because I didn't cook the alcohol taste out of the miso. But I returned it to the stove, the alcohol cooked off, and it was really good! Thanks Chef!     I just started cooking for myself more in Japan and found myself revisiting your channel.
    I remember trying to make some of these dishes while I lived in Canada as an actual child!! I had a hard time finding some ingredients.

    Also unrelated but when I first saw the apron talk I thought I was losing my mind.
