    Chinese chef taught me what she does with ginger. She flips her knife blade upside down so the blunt end of the blade is down and pounds the ginger starting at one end. It takes the ginger out, leaves the strings behind. I've been doing it that way a decade now or so.
    I'm not giving up the chicarones tho lol.

    We grew up eating this top with ampalaya leaves or alugbati leave ( malabar spinach). No basil. And tinapa flakes and tokwa (tofu). Not bacon. Catholics will have this dish on fridays for no meat day.

    Sometimes I crave Filipino/ or other Asian food, but I try to modify it to make it healthy and less sodium or not salty. used what I had at home – yellow split speas. Lentils can also be a substitute if you don't have mung beans. You can make it healthier using chicken breast pieces, and shrimps can be optional by sauteeing them together.
