It takes the ginger out, leaves the strings behind. I've been doing it that way a decade now or so. I'm not giving up the chicarones tho lol.
We grew up eating this top with ampalaya leaves or alugbati leave ( malabar spinach). No basil. And tinapa flakes and tokwa (tofu). Not bacon. Catholics will have this dish on fridays for no meat day.
I love this with spinach so as my little girl. My husband is not a fan of stews but when I make it like a pea soup in ham bone. He will finish a pot of it.

Lentils can also be a substitute if you don't have mung beans. You can make it healthier using chicken breast pieces, and shrimps can be optional by sauteeing them together.

Not sure what makes this dish healthy with the bacon, salt, and all other processed stuff that has gone in it. Nice kitchen setup, though.
