I love that you are incorporating some higher protein meals! I've been doing lots of strength training, and I'm focusing on adding more protein into my diet. Also, I totally agree about spreading the message that buying vegetarian can be so much cheaper than buying meat! Full disclosure, I do occasionally eat seafood (so I'm not a strict vegetarian). But when I walk past the meat aisle, I can't believe how expensive everything is. I'd way rather spend $3 on a block of tofu or $2 for a giant bag of lentils or beans that gets me several servings (and is healthier). I always advocate for adding more plant based meals if someone is trying to decrease their grocery budget.

I love the freezer prep ideas! I usually spend about three hours meal prepping on Saturday, because our weeks are super hectic right now. We plant a large garden every year, so the whole month of May I will double or triple my freezable meals. That gives me lots of time for canning, freezing and drying all my fruits, veggies and herbs; but still allows us to eat well without being in the kitchen all the time. I love cooking, but kitchen burnout is a real thing. I love Valentines Day too! My husband and I even got married on Valentines Day. 😊
