I also buy fresh ginger in bags from M&S when it’s 23p per pkt reduced, then take skin off and freeze , I can then just take it out and grate what I need and pop back the rest , so easy and always on hand

Brilliant recovery from last week, well done! I sometimes get to the point where I have so many bits that I could use up that my mind gets quite in a spin. At that point I sit and make a through list – including lunch as well as evening meals. I think it is important to include a day off cooking so one week i will make a curry or spag bol or chilli but make double so that the following week it becomes a ping meal ( as in put it in the microwave till it goes ping! Lol). Am really impressed with all your hard work. Many people couldn't or wouldn't bother to work out how to feed 4 adults on £23 for week!

I just finished dinner a few minutes ago. I had a meatless meal, potato soup tonight; although, I added butter and one can of milk. I had a bowl of potato soup with two pieces of toast with margarine. And then, I started eating a pint of chocolate, cheesecake ice cream. There are three servings per pint at about 465 calories per serving, and I ate what looked more like half of it before putting the rest of it back into the freezer.

I hope you’re being easy on yourself this week with your dad sadly having passed away. At times like this all that matters is that you eat and try to get some rest, and if it’s easiest to have takeaways every night of the week then that’s great. Thinking of you all x

You did well to get this out at all, Claire. You are in my thoughts. If you need to take some time out, I'm sure we'll all still be here and glad to see you when you're back. Just put yourself first as much as you can. Take care.

I know what you mean, I honestly have never heard any of the Americans that I follow
say that they are having lamb or a beef roast, it,s only seems to be never ending ground
beef as they call it , the occasional pork chops and chicken, nothing wrong with that
but not much of a difference though with not having lamb or beef roast but it takes
all sorts to make the world go round

    Hi
Those sausages chopped up and scrambled with the eggs and some veggies would be delicious. Do you eat cheese because that’s really nice scrambled in as well. We like that raw mixture in greased muffin tins. It’s pretty quick.
It’s as easy as you want it to be 🙂

PS that chicken dinner looked delicious 👍

If you add flour to the fats in the tin from cooking the chicken and heat it…in the roasting pan is fine…then gradually add stock it will make amazing gravy. If it looks pale add a few drops of gravy browning. Way nicer than instant gravy!
