In regards to my last comment. I saw you restore your BIL's griddle. My Vermont castings BBQ grill was $600 back in the day and the cast Iron gave out after about 10 years. So I guess $60 bucks a year is reasonable. Rust is my enemy. Ferrofluid works on mechanical stuff but I would not want to eat it. Even if I coated the griddle with Crisco for the winter the legs would rot out or the lid. Cheap stainless steel grills have had similar results, good stainless steel, a magnet will not stick. So I now buy whatever is cheapest and replace it every 3 years. I've spent good money on new burners only to have the rest of the grill fail after 2 to 4 years. So what do you recommend if I purchase one? A cheap one for a 2 or 3 yr life expectancy or a $1K or more if money wasn't an option? one that would last a lifetime.

    I don't even own a griddle yet. I have experimented with a griddle that fits on my gas grill. But I can't easily scrape off the scraps easily. But with a little work, I've been able to do some of your recipes. I am curious though. If your video is 17 minutes long. Is this a real-time reliable method? I realize the amount of heat you apply adds to or reduces the cook time, al dente vs soft veggies / rare vs well-done meat. I'm just curious how much time is scrapped via editing. Thank you for your videos. I need to select one which I can winterize here in New England. It is just two of us and I need more space than my gas grill griddle.

I'm fortunate enough to have a commercial flat top in my home kitchen for the last 5 years and really can't see EVER living without one!! I use mine every single day for something, I'm not a professional cook but love the complements from family and friends from everything I cook on my flat top!! Your cooking will change for EVER!!!!

    Wowza! Another great meal you've made. That charcoal seasoning would be the ticket on the flat top. I haven't seen anything like that around here. It seems like those 16-year-old appliances, no matter their condition, can't be beat and you know exactly how to use them and cook spectacular things.

    Looks good. After a week of research, largely thanks to your playlist on the subject, I pulled the trigger on a Pit Boss Ultimate 5-Burner today, can supposedly pick it up from Best Buy on Saturday. Will be planning to do my first ever smash burgers this weekend, Saturday if I can get home with it and get it assembled in time for dinner, and Sunday if not.

    Classics day! Yesterday, we planned out the home menu for the rest of the week, which included griddled tacos/burritos for lunch earlier, and enchiladas for Friday. This morning, Tommy did a hatch chile enchilada episode, and now you've done these! I think it's a sign. We are going to break up Mex days with some smoked baby backs tomorrow though.. Excellent tip on toasting the rice! I sometimes do the same with spaghetti noodles.
