I made this recipe tonight for supper, and I must say that it was delicious. I did however cut the olive oil, salt, and lemon juice by half. Do not use the recommended 3 teaspoons of salt. I used 1-1/2 teaspoons, and if I used much more it would have been ruined. You can always add it afterward but you can never take it off once it's on the dish.

Suggestion… Pour in the chicken broth before placing chicken and potatoes in the pan so the herbs and sale/pepper don't wind up in the bottom of the pan.

When you said the chicken is really just an excuse to enjoy the potatoes, I must say, I agree totally. I say let's try a little experiment. Make some extra potatoes, then leave them sitting in a bowl on the kitchen counter. I bet you can't walk through the kitchen without popping one in your mouth each time. I've tried, and failed. They are just that addictive.

I have cooked this dish before but not this way. I first started doing it with chicken wings. Now I am trying it with nothing but thighs. I think the fatty ness of the thighs & thickness of the skin would go great with this recipe. So glad I found this video!
