Ingredients:
4-5 skinless chicken thighs (bone-in or boneless)
2 cups of white rice
3 cups of chicken broth or stock
5-6 cloves of garlic – minced
I medium sized red onions – diced
1 cucumber – diced
1 red or orange bell pepper – diced
2 tbsp of lemon juice
2 tbsp of red wine vinegar
1/4 of olive oil
1 tspn of oregano
Dash of thyme
Salt and pepper to taste
1/2 cup Feta cheese (if wanted)
Instructions:
Season the thighs with salt and pepper. Turn saute function on and add about 1-2 tbsp of olive oil. Brown chicken 2-3 minutes per side. Remove
