When you select manual normal is that high or low pressure? Recipes keep asking me to set on manual high pressure for so-and-so minutes but I can't figure out how to set it for manual high pressure. Thanks for your help

QUESTION:
The stem vent feels wobbly, and does not move smoothly and and in a fixed fashion when I turn it. (see video link)
Is this going to be a problem?

I'm glad this video shows the Condensation Collector as the User Manual has awful illustrations which make the CC look like a round cup inserted somehow on the inside of the cooker.
