    I often do fried rice with whatever is left over. If no one has tried it fried cabbage is delicious ( no i didnt belive it either!). You just shred it fine and cut the bits shorter and put it in just as the onions start to brown. This from raw not pre cooked. A lot of nutrients for very little money!

    We had egg fried rice tonight too 😊. No chicken in ours as we are vegetarian. One of our other cheapest meals that’s nutritious is lentil bolognese. We really enjoy that with whatever pasta we have on hand and a salad .

    I, too, have been calculating the cost of portions with my recipes. In this way I can meal plan better to fit my budget, including making choices when we want to have something more special. I have used today’s report that 1 English pound = $1.32 and here are meals I make (calculated to show English cost).
    1. Chicken, potatoes and green beans in marinade in crockpot .55p per person ($.72)
    2. Pea soup and chickpea bread .78 p per person ($1.03)
    3. Spinach-potato quiche w/fruit salad .90 p per person ($1.19)
    4. Bratwurst & Potato w/fried eggplant .93 p per person ($1.23)
    5. Burrito omelet w/hash browns .70 p ($.92)
    BTW, my pricebook is linked to these recipes, so as I enter the latest price, the recipe cost automatically updates.
    (I think Shoestring Jane would be proud of my Nerd-dom!)

    Tonight, chicken drumsticks left over from yesterday served with noodles, veg cooked in bulk yesterday. Less than £1 each. No spend weekend but will be looking for free food and reductions tomorrow. Also, we have lots of our own eggs so might just raid our veg rack and make a Spanish omelette to use what we've already got. 🙂❤️

    Both meals look very good! I love soup, even in summer unless its a super hot day. The fried rice looks really good! I used to make the same, I had an electric wok, and would make a huge batch (4 kids), have the meal, then they would take it for school lunches over the week. Have a good week!
