    Such a cap, it could be crap, that's what organization put in storebought fermented thing…n that's why store bought fermented food, all of it sucks….Lactobacilli needs good fresh ingredients and one more thing you've left out, salt.. without it it's not the desirable fermentation.This video is total cap for anyone who knows science of real fermentation.     Actually this indeed is KVAS. Even though classic Russian kvas is made from rye bread/flour, kvas can be made from other grains, fruits and berries. To each nation kvas is made differently. The name refers to “fermented” process. Kompot is usually boiled, steeped and cooled fruits/berries, which can also be canned for winter and is NOT usually fermented. It’s more like juice.
