Wauw! Just made this, and love it! So sweet without sugar, I couldn't get over it :-D.
One thing tho, it burned a bit at the bottom. I did add some sultana's to the mix, perhaps they soak more liquid? Consistency was also rather firm, although it loosend quit a bit after adding the condensed milk. Funny, condensed is something we never use in the Netherlands. But I will definetly do now.

This is actually a good starter recipe. I made this today and I added raisins to mine but next time I will add about 1/3 c. Of sugar and a little more cinnamon and vanilla (or at the end) I loved that it was so easy making in the instant pot!
I love that you used what you had on hand AND you added vanilla before cooking!! So many recipes call for “full fat” milk and tell you to rinse the rice, like it’ll turn out terribly if you deviate from the recipe/instructions in any way
I hold off on my Dairy Until the End including the milk because you can never be sure did that milk won't curdle under pressure. I'm going to try this recipe tomorrow I also love rice pudding and only had it when we went out to eat.
the vanilla is added last because it's a suspension of vanilla bean and alcohol and if it's imitation it's just a horrible chemical. But if the alcohol mostly Cooks out the flavor goes with it. That's the promise of adding vanilla at the end.
