When making refried beans, try not rinsing the bean liquid off, the flavor is so much better, plus the nutrients are in that broth. In addition, it helps to thicken them. Just my 2 cents.. Your mileage may vary.

Great video. I never thought of using the chicken fat-great idea. I cut my onion the same way but I leave the root end on, that way it holds the onion together while I cut.
Your video is easier to see with the light turned on.
