    Just so you know, others who wrap the bottom of the springform pan do so to keep water from a waterbath leaking in and getting the crust soggy. A waterbath increases humidity in the oven tl helps prevent cracking of the top. You didn't do that so no need. It has nothing to do with trapping fats and grease or whatever you said from burning…lol.

    Always interesting to see how others perceive things.

    You got a mad fcuking science science experiment going on there.

    You say 3/4 cup erythritol but in the video you clearly put 3 cups, or 3 3/4 cups in the cheese mix, it's very hard to tell which it is, even tho your paper recipe says 3/4 cups that seems very low. I'm going to make this right now but I'm definitely putting more than 3/4cup swerve into the cheese mix
