We enjoyed your beet burgers for dinner today. They were very nice with thumbs up from everyone in the family. I have another batch in the oven for tomorrow. These are not only delicious they are cost effective. I saw packet of two vegetable burgers for $5 (AUD) at the supermarket and would have needed four to feed the family. The home made version cost a fraction of that and made far more. Feeling good. Thank you so much for the recipe link on your blog.

You are amazing. I did not get into no spend January, and will probably continue to keep stocking up in February. I do save many parts of fresh veggies to make an awesome veggie soup I am not vegan but very much limit meat intake, mostly to season the vegetables. I have become very interested in something called fast beans where they pressure then dehydrate beans. This would be great for electric outages , as supposedly they cook up in no time. The very best way I save on groceries is eating almost any kind of vegetable, so that I can shop in season, sales, and stir fry over rice. Garden helps.

Supply chain issues plus floods means our supermarkets have been pretty empty of vegetables, meat and lots of other foods for the past few weeks. I have been so grateful for my veg garden, freezer and store of lentils and beans.

My goal this month is to eat my freezer and pantry and spend about $40 a week only.

I cant wait to try your carrot dogs! I LOVE your BBQ lentil recipe and it is in my regular rotation. It is insane how much the cost of food has gone up. We now buy only enough produce to last just a week, and we will treat the kids to a bag of chips that they have to make last a week and a box of cereal they can eat on weekends. we eat one meat dish per week, and eggs once a week only, and the cost of food is still so high for us now. Looks like we are going to have to go down the whole foods plant based road full time now.

Hi Larry & Hope! A few of my subscribers suggested I pop over to your channel and check out your videos. LOVED this one! I did a pantry challenge at the end of last year, but am gearing up for another one in March. So I'm sure I'll get lots of tips. In England (at least my area of England) I haven't seen empty shelves, but price increases are DEFINITELY happening! The carrot dogs sound interesting, I'm off to read the post.

I really want to try the beet burgers! Do you think it possible to leave out the grapes or replace with something more economical when grapes aren't in season? Or to use canned beets?

We dont often get snow to speak of and about 10 years ago I knew someone working a closing shift on a platue when 8" plus was on the ground, the surrounding roads were being shut down, people were calling fir the hignt and next day….Next thing that happened was that there were about 5 announcing they were sleeping over in the break room. The next day, tons of customers braved slippery street and walked to thier local stores atop the platue; "no one" left the hill. While they closed the night before, the 5 were offered clock-in hours starting at 5AM as long as they woild float wherever needed. And, that store was better stocked than the others until supplies started to sell out.

I bet that there will be more reductions when the stores restock as there too much stock as people have over brought and there is no need for it. Also, you can grow the green onions by placing them in a glass of water and in the fridge.

I knew Hope would be able to stick to her budget even though inflation is through the roof it seems. Great video and thanks for showing us those amazing meals. I bought a three pound bag of very small naval oranges for $4.99 on sale. There were 7 in the bag.

I still have a lot of squash and pumpkin that were grown in our garden this summer. My goal is to incorporate those into our meals as much as possible. Pumpkin is a great way to stretch out meals like chilli and pasta dishes, without adding rice or carbs.

These are very interesting and creative dishes, however I would like to know the calorie content of a lot of these. My family has a high metabolism and we need to eat more. We also are not vegan- although we are dairy and gluten free. I just used 3 cups of rice for my six kids and myself for lunch with no leftovers (and I served beans with it), for example. Just some observations!

With the new year I decided I would try to set a budget for 100 dollars a week on food. One week I went over by 8 dollars but have been doing just around 100. I hit the clearance and mark down sections of the stores. I also go to multiple stores in order to find what I need with the food chain mess we all are in. Thank you for your tips
