I thought water over 110 degrees would kill the yeast?

The handle on my Dutch oven is not safe above 400 degrees. I'm thinking of using foil as a cover. Will that work?
I tried this recipe as is and it was really good, then I tweaked it in a couple of ways. I added honey to the bottom of my measuring cup before the hot water. In the dry gredients I added sunflower seeds. Essentially making sunflower honey bread. I also made it in a regular loaf pan in the air fryer oven. I did 15 minutes at 340 degrees and then covered it with aluminum foil back in the air fryer oven at 400 for 20 minutes. I wish I could add a photo.
Now read this……….. very boring it's the bread want to see not your face ! The food is the star NOT YOU !
I have made this recipe about 6 times now and my dough never doubles in size nor comes anywhere near that. Are you sure you are only supposed to use 1/4 tsp of yeast? Frankly, doesn't seem like enough. Would like to get your thoughts. Thanks.
