    Dear Sir if you have a moment to explain what are "soft bones?" Would it be the cartilage, or the ends of the ribs that are soft enough to chew? Thank you for another tempting recipe. Your sauces are so simple yet so tasty.

    This looks delicious again! One may look at my ignorance, but I did not know a Chinese recipe with potatoes before. With China I associate rice and noodles, but not potatoes. So – learned something new

    I like the look of this and will certainly try it. I have my doubts that all lean pork will cook to tender in 15mins steaming. Spare rib you recommend might tenderise quickly but depends on the quality of the pork you can buy. Shoulder steak probably not; Pork tenderloin maybe would but I think it could be wise to poke the meat after 15 mins and see if it takes a sharp knife through a piece easily or whether it's best to steam on for another 15 or 30 mins. Of course there's then the danger the potatoes will become over cooked. Anyhow I will get some Spare Rib steaks and cut them up then have a go. Thanks for this super idea.
