Mom got a huge bunch of coriander from the grocery store yesterday and to my surprise, many of the plants had thicc roots. I prepped and cleaned the roots and put them in the freezer for future noodle soup/ curries. Is this ok?

I have a question, I'm Indian but I live in Italy and it's pretty difficult to find Coriander leaves where I live. I can only find Parsley. Will that be ok? I use parsely even for "Biryani" since i don't find Coriander.. Thank you so much in advance ❤️
