    Great. But what is the 200 year old ‘dough’ recipe? Lots of different techniques applying the same ‘dough’ yet no recipe. Some of us don’t have a magic bucket full below the counter waiting to be used.

    what is the curd, and curd mass I'm seeing being referenced as an ingredient. Being from the US, I'm used to Curd referencing either Cottage Cheese, or actual Cheese curds, and cheese curds are a lot more solid that what I'm seeing here.
