    so simple but so yummy!! My friend Rosa I used to roommate with when I was about 19 used to make us fried corn tostadas with Mexican rice on them and then she'd pour chicken broth on top of them and sprinkle a little cotija!! We were hard working girls at that time and going to school so we didn't have much money so this was a cheap easy hot meal we would have in the winter when we couldn't afford to buy meat!!!😁 I remember it tasting so delicious though! cuz we were hungry!! Is this a recipe you have ever heard of Steph?? or did my friend Rosa just create this outta necessity for us?? I've always wondered and over the yrs. I've lost contact with my old friend, unfortunately😥! What do you think Steph???ty 😊

    I love using lard or beef fat to cook beans and certain things, aside from using cold pressed olive oils, animal fats are safer and healthier for you than vegetable oils or any “industrial oils” oils that have to be extracted by machinery. Our bodies know animal fats and they know how process them and they’re natural. Plus animal fats have all the flavor

    So, I had all the ingredients on hand to make this. Which I promptly did, but as I made the first, second and finally a sixth one. I started stacking them, and it dawned on me, that if you added candles to the top of the stack. It would be the best birthday cake ever.

    Crispy, fried corn tortillas, bean slurry icing, with generous amounts of cilantro, onion and chopped La Costena pickled jalapeños in between each layer…Happy Effing Birthday to me…there's nothing else that needs to be said. Well, thank you to the 'Donas' would be in order.

    Woah. Our style of enfrijoladas is just rolled tortillas filled with cheese, beans and slathered on top with more beans and cheese. This one's definitely a lot more time consuming but I cant wait to try them!

    Love your channel. I have a sister and we do a lot of our bonding, problem solving and mischief while I am cooking too. Sisters are forever friends. I have a long shot question. I have enjoyed chimichangas at two different restaurants that were served with a sauce that was delicious and different. Not a enchilada sauce or salsa. Not heavy with tomato or chilies. Probably had both but also kinda like a gravy? One called the chimichanga Sonoran style. The other were mini chimipaquitos. I was curious if you may have a similar family recipe?
