    I assume you got the red Chilie blend at your local Mexican grocery store. That would be a perfect ingredient to add to a lot of recipes. I am still trying to justify getting one of the pressure cookers. Since time is not an issue with me, I tend to use one of my many crock pots for dishes like this.

    You are right about the value of these modern electric pressure cookers. I recently bought an 8qt Instant Pot brand because of the stainless steel bowl. I do batch cooking for on sale meats. Brisket at $1.77 a pound, pork shoulder, etc… I pressure cook them and run them in my smoker for ~2 hours (faster than 10~12 hours). Then after they chill over night. I carve and cube them into portions and vacuum seal them for my freezer. Then when I want a rice dish, tacos, chili, etc… I have protein to dump in. Soon I will be attempting home made tamales with the meat. I will use the pressure cooker to make the red chili sauce you made a month or two ago.

    Dang another toy I don't have and never knew you could cook with one. Outside of rice I figured there is no purpose for a pressure cooker. I guess I named myself properly.

    HI! Sorry…. i didnt respond…. ive been swamped….we have such a nurse shortage ive been wrkin 16hr shifts for the past 2wks!
    My greens came out too salty πŸ™ but I was told by my AA friends that they were quote "FINGER LICKIN GOOD".

    Now enchiladas:

    Enchilada sauce: (SUPER EASY)
    DRY CHILE GUAJILLO (8 of them…take stem n seeds off)
    GET 2 CUPS OF WATER N PUT DRY CHILES N WATER TO BOIL.
    DRAIN WATER ADD CHILES INTO BLENDER
    ADD WATER (ABOUT 2 CUPS) ADD SALT….

    THATS IT. YES THATS IT. WE DNT ADD FANCY SHIT FOR THIS.

    IN A PAN, PUT CORN OIL OR LARD…..
    GET UR TORTILLAS DIP ONE AT A TIME…. INTO SAUCE…..THEN PUT INTO PAN…. JUST ENOUGH TO WARM UP …U DNT WANT TO HAVE THEM CRUNCHY. JUST ABOUT 10 SECONDS PER SIDE.

    TAKE OUT AND FILL WITH CHEESE N ONION mix (ONION N oregano). Roll up n add rice n leetuce n sour cream if you like and bam…..thats an AUTHENTIC MEXICAN ENCHILADA.

    MEXICO DOESNT MAKE YELLOW CHEESE LOL. Thats a tex mex shit n we hate that. We use CHIHUAHUA CHEESE from a company name SUPREMO (GOOGLE IM SURE ITS AVAIL WHERE U LIVE) its equivilient to Mozarella cheese. Dont buy pre grated…..it has extra preservatives n tastes different. Always buy n grate urself.
