My mom makes potato enchiladas, it was her mom's recipe, she uses homemade flour tortillas, dips them in sauce, fries them on both sides in very little oil and fills them with sharp cheddar, purple onion, cubed potatoes, black olive and diced dill pickle..yes! pickle, she then bakes them till the cheese melts. The enchiladas are not wet and soggy because the sauce gets infused into the tortillas and can even be eaten like a burrito, they're even delicious cold.
