    As a Goan, I knew it had to be Xacuti. Highly recommend visiting Goa next time you're in India; it's so culturally distinct, and the fish curries are going to be so much fresher. I've had pomfret in the states and in Goa and there's no comparison.

    Great that some dishes that only some of us are familiar with made it to this list. Maybe you could do a series on not-so-well-known dishes from India, like northeast indian dishes from the seven northeast indian states and Sikkim, and also eastern Indian and western Indian dishes. At present, it's only some dishes of punjabi-mughlai origin that the world sees as Indian, as well as some South indian food like dosa and Vada. Indian cuisines are so diverse and have so much variety. Wish someone would explore all of them.
