    Leaving the skin on the ginger made a huge difference in the base of the broth I made for Wonton broth.     Cooking the wontons in the same broth leads to thickened cloudy soup. I would suggest to cook the wontons- and noodles separately. The soup base can include the shrimp shells to be strained. Thanks for posting the American version, though.

    i suggest skipping ginger and cornstarch in the wonton mix, as the grated ginger isnt evenly mixed, also just ruins the taste. as for cornstarch it thickens the soup base as the wonton seeps into it, which im sure not many want their wonton soup thick.
